Homemade Mayonnaise

1 tbsp fresh lemon juice
1/2 tsp dijon mustard
1/8 tsp salt
1 large pasteurized egg
3/4 cup canola oil

Combine first 4 ingredients in a blender, process until smooth. With blender on, gradually pour in oil, process until smooth and completely blended.

Serving size 2 teaspoons, 87 calories, 9.6g fat.

Refrigerated the mayonnaise will last for 5 days.
